Whoopie Pies!

I had been meaning to try baking some Whoopie Pies since seeing them here, here, here and tasting a great one on Brick Lane a few sundays ago. They are pretty easy to make but a lack of electric hand whisk made making the filling pretty difficult (but worth it). We adapted this recipe from Cakespy for the tastiest ones.
